This recipe, in addition to being delicious, will add a colorful and fun touch to your menu. The preparation time is 15 minutes plus 50 minutes of cooking in the oven. You get between 6 and 8 servings. Best of all, it’s easy to do!

Ingredients:

  •   2 cups precooked white cornmeal P.A.N.
  • 1 ½ cups whole milk
  • 150 g unsalted butter
  • 3 eggs
  • ½ cup brown sugar
  • ½ cup of white sugar
  • ½ cup cocoa powder
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon xanthan gum
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt

Preparation:

  1. Preheat the oven to 180 ° C. Then, grease and flour a mold.
  2. With an electric mixer, beat the butter until it is creamy. Add the two types of sugar, then mix.
  3. Add the eggs one by one. Add the milk, the precooked white cornmeal P.A.N., the xanthan gum, the baking soda and the baking powder, mix until a homogeneous consistency is achieved.
  4. Separate the mixture in half. Combine one of the halves with the cocoa.
  5. Fill the mold by inserting a little of each mixture one on top of the other.
  6. Bake for 50 minutes.
  7. Wait to cool to unmold.

Chocolate chip cookies

Making these delicious cookies is very simple and only takes 30 minutes (15 to prepare, plus 15 to cook in the oven). At the end you will get between 18 and 20 servings to delight your customers.

Ingredients:

  •   1 ½ cups dark chocolate discs or chocolate chips
  • 1 cup precooked white cornmeal P.A.N.
  • 1 cup of brown rice flour
  • ½ cup icing sugar
  • ½ cup brown sugar
  • 150 g of butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • salt to taste

Preparation:

  1. In a bowl, stir together the precooked P.A.N. white cornmeal, brown rice flour, baking powder, and baking soda. Reserve the resulting mass.
  2. In another container, beat the butter until pale with an electric mixer, add the icing sugar and brown sugar, then mix. Add the vanilla extract and the egg. Combine everything.
  3. Incorporate the dough, interspersing with the discs or chocolate chips.
  4. Preheat the oven to 170ºC and prepare two trays with waxed paper.
  5. Separate the dough into small circles of the same size and distribute them on the trays, leaving 2 cm of separation between each one.
  6. Bake 12-15 or until edges are slightly golden.
  7. Proceed to remove the trays from the oven to let the cookies cool on a rack.

Strawberry muffins

Fluffy and delicious, that’s how your strawberry muffins will be after 20 minutes of preparation plus another 30 to bake. The end result is between 6 and 8 servings. Also, the recipe is easy to follow.

Ingredients:

  •   4 eggs
  • 2 cups of strawberry jam
  • 1 cup precooked yellow cornmeal P.A.N.
  • 1 cup of ground almonds
  • 1 cup of brown sugar
  • ½ cup butter at room temperature
  • 2 teaspoons of baking powder
  • ¼ cup cornstarch
  • ½ teaspoon lemon zest

Preparation:

  1. Preheat the oven to 180 °.
  2. Grease a muffin tin with butter and sprinkle P.A.N.
  3. With the help of an electric mixer, beat the butter together with the brown sugar.
  4. Incorporate the rest of the ingredients one by one (except for the strawberry jam) while continuing to mix. First each egg, then the lemon zest, the pre-cooked yellow cornmeal P.A.N., the baking powder, the cornstarch, the powdered almonds.
  5. When the consistency is homogeneous, add the strawberry jam and integrate with a spatula.

Brownies

A dessert that your guests will love, especially those who like chocolate. It is a divine combination of flavors and textures, which are obtained after making the simple preparation that requires 25 minutes and another 30 to cook in the oven. You will get between 10 and 12 servings.

Ingredients:

  •   1 ½ cups sugar
  • 4 medium eggs
  • 1 cup butter at room temperature
  • 1 cup of melted dark chocolate coating
  • ½ cup precooked white cornmeal P.A.N.
  • ¼ cup cocoa powder
  • ⅔ cup of water
  • 1 teaspoon of baking powder
  • Cocoa powder to flour the mold a pinch of salt
  • Chopped walnuts (optional).
  • Chocolate chips (optional, for garnish)

Preparation:

  1. Preheat the oven to 180 ° C. Then grease a mold, sprinkle cocoa powder and reserve.

For the filling

  • 2 cups chopped pecans (pecans)
  • 1 cup corn syrup
  • 1 cup of pecans in halves (decoration)
  • ¾ cup brown sugar
  • 3 eggs
  • 4 tablespoons butter, melted
  • 1 tablespoon bourbon (optional)
  • 1 teaspoon vanilla
  • ½ teaspoon of salt

Preparation:

For the mass

  1. Combine the precooked P.A.N. yellow cornmeal, almond flour and salt, then sift through a fine sieve.
  2. Add the butter and mix with the tips of your fingers. Add the water slightly until you get a compact mass.
  3. Preheat the oven to 200 ° C.
  4. Spread the dough on a waxed or waxed paper, trying to make it 2 cm larger than the mold. Using the paper, turn the dough over and place it in the mold covering it completely, adjusting the dough on the surface with your fingers. Remove leftovers.
